Roast potatoes are a classic side dish, but getting them perfectly crispy can be a challenge. Follow these steps to achieve golden, crunchy perfection every time.
Choose the Right Potato
Not all potatoes are ideal for roasting. Russets or Yukon Golds work best due to their starchy texture. Starchy potatoes create a fluffier inside and a crispier outside. Cut them into even-sized pieces to ensure they cook evenly.
Parboil Before Roasting
Boiling the potatoes briefly before roasting helps create the perfect texture. Bring a pot of salted water to a boil, then add the potatoes and cook for about 10 minutes.
They should be slightly soft on the outside but still firm in the center. Drain and let them steam-dry for a few minutes.
Rough Up the Edges
Once the potatoes are drained, shake them gently in the pot to rough up the edges. This helps create more surface area, leading to a crispier exterior. You can also sprinkle a little flour or cornmeal to enhance the crispiness.
Use Plenty of Oil and High Heat
Preheat your baking tray with oil before adding the potatoes. A hot tray helps the potatoes start crisping right away. Spread them out in a single layer, making sure they aren’t touching.
Roast at a high temperature, around 425°F (220°C), and turn them halfway through cooking to ensure even browning.
